Features & Application
Distilled glycerol monostearate, white or light yellow waxy or powdery solid, is odorless and tasteless. It is insoluble in water and can be dispersed in water when mixed with hot water by intense shaking. Distilled glyceryl monostearate has a stronger emulsifying power than crude glyceryl monostearate.
1. It is used in candy and chocolate, which can prevent the separation of milk candy and toffee.
2. It avoids chocolate granulated sugar from crystallizing and oil-water separation, increasing the feeling of fineness.
3. It is used in ice cream to make the tissue mix evenly and finely, improving shape retention.
4. It is used in margarine, which can avoid oil and water separation and stratification.
5. It is added to fatty protein drinks to improve stability and keep oil from floating or protein from sinking.
6. It is used in biscuits to effectively keep grease from seeping out and improve the brittleness of biscuits.
