 Introduction:
Sodium citrate is inodorous and taste salt, cool. It will loss crystal water at 150° C and decompose at more high temperature. It dissolves in ethanol. Sodium citrate is used to enhance flavor and maintain stability of active ingredients in food and beverage in detergent industry, it can replace sodium tripolyphosphate as a kind of safe detergent it can also be used in fermentation, photography and metal plating.
Application
1.Sodium citrate has a very wide range of uses which has no toxicity pH regulation and good 
stability, so it can be used in food industry. 
2.Sodium citrate was used as food additives, demand maximum, mainly used as a flavoring agent, 
buffering agent, emulsifier, expansion agent, stabilizer and preservatives, etc.
3.Sodium citrate with combination of citric acid, used as a variety of jam, jelly, juice, soft drinks, 
cold drinks, dairy products, and pastries and other gelling agent and nutritional supplement agent and flavor agent.
